Serves 4.
Ingredients:
- 6oz plain flour
- 3oz butter
- 2oz caster sugar
- 1 egg
- 3 green eating apples
- 3 red eating apples
- 2tbsp apricot jam
- lemon juice

- 9 inch flan dish
Recipe:
- Peel the green apples and cut into quarters. Remove core and slice
quite thinly. - Put apples in pan with 2 tbsps watre. Cook over low heat until soft
(about 5 mins). Stir with wooden spoon. - Sieve flour into bowl. Add butter cubes and rub into flour.
- Separate egg. Add sugar and egg yolk to flour mixture and squeeze it
gently into a ball (add a couple of drops of water if it is too dry to
stick together). - Sprinkle some flour onto board and rolling pin. Rool pastry out to
about 10in/26cm wide and 1in/2cm thick. - Line a 9in/20cm flan dish with pastry. Trim edges and put in fridge
for 30 mins. Then bake for 5 mins at 200C/400F. - Remove from oven. Spoon in the cooked apples. Slice red apples, dip
in lemon juice and lay them in circles on top. - Mix jam with 2 tbsps hot water and spread over apples. Bake for 30
mins until golden on top.
