Serves 4.
Ingredients:
- 375g lean lamb, cut into strips
- 2 tsp dry sherry (if available/desired)
- 2 tbsp soy sauce
- 1 tbsp oil
- 1 leek, sliced
- 1 onion, sliced
- 2 cloves garlic, thinly sliced
- 1 tsp powdered ginger or 1/2 tsp grated ginger
- 400g of desired stir fry vegetables
- Enough rice or noodles for 4
Equipment:
- Large wok (if you don’t have one a frying pan will do)
- Nutmeg grater if using fresh ginger
Recipe:
- Marinate the lamb in the soy sauce (and sherry).
- Heat oil in a wok/frying pan on high heat.
- Add lamb and marinade. Stir quickly for 5 mins.
- Add leeks, stir for 2 mins.
- Add onions, garlic and ginger plus the other vegetables. Stir
for 2 more mins. - Serve with rice or noodles.
